Intense, with a tannic structure, yet the plush currant, anise, earth and cedar flavors push to the forefront and show an excellent range of depth and concentration. The finish turns tight, with a burst of plum, berry cedar and tobacco.

Aroma: Aromas of blackberry, plum, clove, coffee, and cassis with hints of toasty oak and sweet vanilla.

Flavor: Flavors of cassis, coffee and toasted oak add to this rich and mouth-filling Cabernet. A lingering finish is the result of a well-structured body, full texture with ripe, refined tannins.

The 2005 J. Lohr Estates Seven Oaks Cabernet Sauvignon has a dark, brick-red color with purple hues and good density. Once again, the lovely cherry fruit aromas of Cabernet from Paso shine through with hints of licorice and marzipan, complemented by spicy, vanilla oak. On the palate, the bright cherry pie fruit dominates with blueberry/currant flavors in the background. Underlying the fruit is a full to mid-palate weight, with the soft texture of the tannins carrying through into a long and lingering finish

The 2003 Joullian Estate Cabernet Sauvignon has the best combination of richness and balance since the 1997 vintage. "Classic" wines always have a palette that is the mirror image of the nose, and this is immediately obvious with our 2003 Cabernet.

Late, cold spring rains kept soil temperatures cool, which delayed budbreak, and early growth was also slow during a cool May. Cabernet growers were getting nervous until a late September heat wave sped up ripening, and a perfectly dry, warm October lowered the acids and boosted flavors gracefully and predictably. We harvested two days before the onset of the November rains.

Rich, robust, balanced and concentrated ‎ this is Carmel Valley Cabernet at its finest. Note that our new French oak barrels add spice, not overtly woody flavors...3-year air dried stavewood makes the difference. Fermentation with multiple yeast strains boosts aromas, amplifies black fruit/anise flavors, and "texturizes" the ample tannins of the Bordeaux varietals.

The harvest of 2004 began on September 17th and concluded on November 2nd, the day before the start of heavy autumn rains. A moderately deep garnet, the 2004 Opus One offers aromas of blackberry, plum, hazelnut, graphite, olive oil, cocoa and dried cherries. The wine presents a soft,rich entry, nuances of dark chocolate, black licorice and herbs linger on the finish.

Opus One Winery is a winery located in Napa Valley. The winery was founded as a joint venture between Baron Philippe de Rothschild of Château Mouton Rothschild and Robert Mondavi to create a single Bordeaux style blend based upon Cabernet Sauvignon. It is located across California State Route 29 from the Robert Mondavi Winery in Oakville, California. The creation of this winery venture in 1978 was big news in the wine industry; de Rothschild's involvement added an air of respectability to the burgeoning Napa wine region.

Combining grapes from several of our Cabernet Sauvignon vineyard parcels, this cabernet offers a burst of distinctive, rustic fruit flavors with a hint of leather and spice. French oak and soft tannins round out the finish.

The "Blackjack Pasture" is our signature wine and our most powerful and exclusive cabernet sauvignon from a tiny 2.4 acre parcel that produces very small yields and intensely colored small berried grapes. Every vintage sees 100% new french oak to match the massive black fruit this vineyard gives. This opulent and thick cab has currant and blackberry flavors with lush chocolate notes.

Bright, fresh and lively, our 2003 Red Rose Hill is a truly elegant wine with hints of sandalwood and roses on the nose. In the mouth it explodes with the characteristic cherry and red currant flavors of our Carmel Valley vineyards. Soft tannins and bright acids round out this delightful wine. Fabulous upon release, our Red Rose Hill will age well over the next 5-7 years.

Fine, soft tannins and subtle oak contribute well-balanced roundness, and the finish lingers considerably longer than you might expect. If Cabernet is California¡¯s luxury wine, this one is arguably the best bargain going.

The 2005 Private Selection Cabernet Sauvignon comes from cool-climate Central Coast grapes and has been blended with Syrah and small amounts of Merlot, Malbec and Petite Sirah. The wine has the sweet black cherry and dark berry fruit character that distinguishes California's finest Cabernet Sauvignons, and its ripe fruit is supported by velvety tannins and well-integrated oak. This is a wine of excellent depth, richness and length on the palate.

Enjoy with a wide array of dishes, from standing rib roasts, grilled steak, and roast duck to spare ribs, lasagna, and flavorful hard cheeses.

Sourced from Alexander, Dry Creek, and Russian River Valleys, the wine spent 20 months in new French oak. On the palate it exhibits aromas and flavors of black currant, blackberry, and chocolate.
